Instructions
- Heat the milk and cream together over a medium/low heat until hot (but don’t allow it to boil).
- Add 2 tablespoons of the warm milk mixture to a small dish and stir in the cornstarch to create a thick ‘slurry’, then pour it into the pan of milk.
- Pour in the sugar, cocoa powder, chocolate, vanilla and salt. Heat gently, stirring, for a few minutes until the chocolate melts and the mixture thickens slightly.
- Remove the pan from the heat and let the fudgesicle mixture cool.
- Whisk the mixture briefly, then pour into popsicle molds and freeze for at least 4 hours until solid.
Notes
- When heating up the milk, it's important to make sure it doesn't get too hot and scorch. This could give the homemade fudgesicles an unpleasant flavor.
- If you want to avoid any lumps, make sure to sift the cocoa powder before adding it to the milk mixture.
- Assemble everything before turning on the heat. This way, once the milk is hot, you can add everything in quickly and easily.
- The time it takes to freeze the fudge pops will depend on your freezer and how warm the mixture is. They should freeze in 4 hours, but it's best to freeze overnight.
