This funnel cake recipe combines milk, eggs, sugar, vanilla, flour, and baking powder to form a batter that is poured in a spiral pattern into hot oil heated to 375°F. Frying until golden brown on both sides yields a crisp but slightly airy cake. The swirling technique creates a unique net-like shape with crispy edges and softer spots inside.
Sprinkling the freshly fried funnel cake with powdered sugar adds sweetness and a snowy finish. This treat pairs well with fruits, chocolate sauces, or whipped cream, but can also be enjoyed plainly. The batter can be adapted with different milk types including non-dairy alternatives, and the flour should be measured properly for a light texture.
Using a kitchen funnel or a pourable vessel with a spout facilitates forming the signature spiral. A neutral high smoke point oil, such as peanut or canola, is best for frying. The funnel cake is best served fresh but can be kept briefly before serving.
Ingredients
- 2 cups milk
- 3 egg large
- 1/4 cup granulated sugar
- 1/4 teaspoon vanilla extract

Instructions
- In a large bowl, whisk together the milk, eggs, sugar, and vanilla until well-combined.
- Add the flour and baking powder. Whisk in just until combined.
- Set aside.
- In a heavy skillet, heat the oil to 375F.
- Cover the bottom end of a funnel with your finger.
- Spoon 1/2 cup batter into the funnel.
- Hold the funnel several inches over the hot oil and move your finger to release the batter.
- Swirl the batter into the oil in a spiral motion. I've found going from the outside of the spiral to inside works best.
- Fry until golden brown on one side.
- Carefully flip the funnel cake over and continue to fry until the other side is golden brown.
- Remove to a paper towel-lined plate.
- Sprinkle with powdered sugar just before serving.

- You can use any milk, from skim to whole, or non-dairy alternatives like almond milk in this recipe.
- Measure flour by stirring or sifting then lightly spooning into the cup; do not tap or compact it to ensure correct amounts.
