The ingredients are whisked until fully combined, then churned in an ice cream maker to incorporate air and freeze the mixture into a creamy soft ice cream.
The molasses adds a dark, caramel-like sweetness and moistness that pairs well with the warm, aromatic spice blend. The ice cream texture is smooth and velvety, a refreshing contrast to the spices reminiscent of gingerbread cookies but in a cold dessert form.
This ice cream can be served on its own or alongside fruit, pies, or warm desserts for a festive touch. After churning, the ice cream should be frozen for several hours to firm up properly before serving.
Ingredients
- 1 cup heavy cream
- 1 cup milk low fat
- 2/3 cup sugar
- 2 tsp ground ginger
- 1 tsp cinnamon
- 1/2 tsp allspice
- 1/4 tsp cloves ground
- 1/4 tsp nutmeg freshly grated
- 2 Tbsp molasses
Instructions
- In a large bowl, whisk together all the ingredients. Stir long enough so that the sugar is dissolved and the molasses has been completely incorporated.
- Pour the mixture into an ice cream maker and process according to your machine's directions. For me the ice cream takes about 25 minutes.
- Turn the soft ice cream into a container, cover with plastic wrap, and put in the freezer to firm up, this will take a minimum of 4-6 hours, or overnight.
