Homemade Granny Cake Recipe

The Homemade Granny Cake is a moist pineapple and egg-based cake topped with a brown sugar and pecan crumb, finished with a warm vanilla glaze. Its texture contrasts a soft, sweet cake layer with a crunchy nut topping and a rich, creamy glaze that soaks into the cake. This dessert is baked in a 9x13 dish and offers familiar home-style flavors.

Description

This recipe combines granulated sugar, flour, baking soda, and salt in the batter with eggs and canned crushed pineapple, which adds moisture and acidity to enhance texture. Once the batter is poured into a greased dish, a topping of packed brown sugar and chopped pecans is sprinkled on before baking. The cake bakes for about 40 to 45 minutes until a toothpick comes out clean.

While baking, a glaze is prepared by boiling evaporated milk, granulated sugar, and butter, then stirred with vanilla extract. After baking, the cake is poked with a knife to allow the glaze to soak deeply, contributing both sweetness and moisture. Cooling the cake completely before serving helps the flavors meld and the glaze set.

This cake is well-suited for gatherings or casual dessert, bringing a nostalgic and rich flavor profile with the combination of pineapple, pecans, and vanilla glaze. It can also be served as a snack or tea-time treat.

Ingredients

Servings
  • 1 1/2 cups granulated sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 ounce pineapple crushed, canned, with juice
  • 2 egg large

Topping

  • 1 cup brown sugar packed
  • 1 cup pecans chopped

Glaze

  • 1 cup evaporated milk
  • 1/2 cup granulated sugar
  • 1/2 cup butter 1 stick
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350ºF degrees. Grease a 9x13-inch glass baking dish with non-stick cooking spray; set aside.
  2. In a large mixing bowl, combine the granulated sugar, flour, baking soda, and salt.
  3. Add the eggs and crushed pineapples with juice; mix until well combined.
  4. Pour the cake batter into the prepared baking dish.
  5. Sprinkle the top of the batter with chopped pecans and then brown sugar. Bake the cake for 40-45 minutes, or until a toothpick inserted in the center comes out clean and dry.
  6. While the cake is baking, mix the evaporated milk, granulated sugar, and butter in a medium saucepan and heat over medium heat. Bring the mixture to a boil, then remove from the heat and add vanilla; stir well and set aside.
  7. When the cake is finished baking, poke the cake all over with a knife or the end of a wooden spoon to allow the glaze to soak in to the cake.
  8. Pour the hot glaze over the cake. Cool the cake completely to room temperature before serving. For best results, allow the cake to soak in the glaze for several hours, then slice and serve.
