Homemade Hazelnut Butter Recipe

This homemade hazelnut butter recipe transforms roasted hazelnuts into a creamy spread using just nuts and salt. Roasting unlocks rich flavor while rubbing off skins smooths the texture. Blending gradually changes nuts from a coarse meal into buttery smoothness that can be seasoned to taste. This nut butter works well as a sandwich spread or an ingredient for desserts and breakfasts.

Description

Homemade Hazelnut Butter Recipe starts with roasting 4 cups of shelled nuts such as hazelnuts, walnuts, almonds, or pecans. After roasting and cooling, the skins are removed by rubbing with a tea towel, then the nuts are processed with sea salt until the mixture turns from coarse meal to a smooth butter consistency. Additional salt or sugar can be mixed in to adjust flavor and texture.

The process involves gradual blending where nuts break down from meal to flour to paste to butter, ensuring a creamy texture. Roasting enhances the nuts’ natural oils, improving both taste and ease of blending.

This nut butter provides a homemade alternative to store-bought spreads and can be customized by adding ingredients such as chocolate or honey during the final moments of processing to add extra flavors and variations.

Ingredients

Servings
  • 4 cups nut such as hazelnut, walnut, almond or pecan, shelled
  • ¾ teaspoon salt sea salt

Instructions

  1. Preheat your oven to 350’F.
  2. Spread hazelnuts on a baking sheet and roast 10 minutes. Remove from oven and let cool on a tea towel.
  3. Once cool enough to handle, rub the nuts with the tea towel to remove any extra husks/skins. It can be helpful to shake the nuts in a colander to try and separate the husks from the nuts.
  4. Pour nuts (minus the husks that you’ve rubbed off) and salt into a food processor and turn it on. Stop the processor occasionally to scrape down the sides. The nuts will first turn into a coarse meal, then a nut flour, then into a paste and finally into a creamy butter. Taste it once you like the consistency and continue to blend if it is still too gritty for your taste. Season with extra salt or a teaspoon or 2 of sugar if desired.

Notes

  • Add any extras like chocolate, honey, maple syrup, or seeds toward the end of processing to incorporate them evenly.
