Homemade Italian Dressing
Description
Homemade Italian Dressing features a combination of olive oil, red wine vinegar, lemon juice, and Dijon mustard that creates a tangy and slightly sharp base. The inclusion of Italian seasoning and Parmesan cheese adds layers of savory herbaceousness and subtle umami depth. Garlic powder or fresh garlic gives an optional mild pungency depending on preference. Mixing the ingredients by shaking in a jar or whisking in a bowl unites them into a cohesive, pourable dressing that clings nicely to greens or vegetables.
The dressing’s texture is smooth yet slightly thickened by the Parmesan cheese. Its flavor balance suits a variety of leafy salads, grilled vegetables, or marinating chicken or fish before cooking. Adjusting the garlic source allows for variations in pungency, while the Italian seasoning brings classic herb tones that tie the flavors together. A quick shake or stir before serving re-emulsifies the components and refreshes the taste.
This dressing stores well refrigerated and benefits from fresh preparation to maintain brightness. Bottled grated Parmesan with anti-caking agents may clump but does not affect the taste. This recipe offers a straightforward way to create a flavorful Italian-style dressing without artificial additives or preservatives.
Ingredients
- 1/2 cup extra virgin olive oil $0.84
- 3 Tbsp red wine vinegar $0.30
- 1 Tbsp lemon juice $0.04
- 2 tsp Dijon mustard $0.12
- 1/4 tsp garlic powder $0.02
- 1 Tbsp Italian seasoning blend $0.30

- 1/4 tsp black pepper $0.02, freshly cracked
- 1/2 tsp sugar $0.01

Notes
- For a stronger garlic flavor, substitute garlic powder with one minced clove of fresh garlic.
- Bottled grated Parmesan containing cellulose may clump slightly, but it will not impact the dressing's flavor.
