Homemade Marinara Sauce
Description
This marinara sauce begins with cooking diced onion in olive oil until softened and golden, developing sweetness and depth. Minced garlic is then cooked briefly to release aroma without burning. The sauce incorporates both crushed and whole canned tomatoes, tomato paste for richness and thickness, and a carefully measured combination of dried oregano, basil, parsley, and Italian herbs to create a layered Italian flavor profile. Sugar is added to balance natural tomato acidity.
The mixture is brought to a light boil then reduced to a simmer, partially covered, and cooked for 30 minutes, allowing flavors to meld and sauce to thicken. Fresh chopped basil stirred in near the end adds brightness and freshness. The final sauce is seasoned to taste with salt and pepper. It can be served immediately over pasta or cooled and refrigerated for up to one week in airtight containers.
Ingredients
- 2 tablespoons extra virgin olive oil
- 1 yellow onion finely diced
- 6 garlic minced, cloves
- 28 oz crushed tomatoes canned
- 14.5 oz tomato whole, canned
- 2 tablespoons tomato paste
- 2 tablespoons sugar
- 1/2 teaspoon oregano dried
- 1 teaspoon basil dried
- ½ teaspoon parsley dried
- ½ teaspoon italian herbs
- 1/2 teaspoon salt sea salt
- 1/4 teaspoon black pepper freshly ground
Garnish:
- basil finely minced, chopped, fresh
Instructions
- Place a medium saucepan or dutch oven over medium heat and add the olive oil. Once the oil is hot, add diced onion, cook stirring often until soft and golden, for about 4-5 minutes.
- Add minced garlic and stir for 30 seconds, or until fragrant.
- Stir in crushed tomatoes, whole tomatoes, and the rest of the ingredients. Stir well to combine.
- Bring to a light boil and immediately reduce heat to low. Simmer partially covered for 30 minutes.
- If desired stir in 1 tablespoon of freshly chopped basil.
- Taste and adjust for salt and pepper and once done remove from heat.
- Garnish with freshly chopped basil and serve over pasta.
- Before storing, let the sauce cool completely, add it to mason jars or airtight closed containers, and refrigerate for one week.
