Ingredients
- 10 (6 inch) flour tortilla fajita size
- 1 Tbsp. olive oil
- 1 lb. ground beef
- 1 (16 oz. can) refried beans
- 1 (1 oz. packet) taco seasoning
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 5 Tbsp. hot sauce
- 8 oz. Colby jack cheese shredded

Instructions
- Preheat oven to 300°F. Place 4 flour tortillas on a baking sheet at a time. Using a fork, poke surface of tortilla about 8 times. (This helps prevent the tortilla from bubbling). Bake for 15 minutes, then cool. Tortillas should be firm and chip-like. Repeat with the remaining tortillas.
- In a medium non-stick skillet over medium heat, add olive oil to pan. Once hot, add in the ground beef and cook until no longer pink. Season with salt, pepper and add in the taco seasoning. Stir to combine.
- Add in the can of refried beans and mix in with the meat.
- Add 1/2 cup of the beef/bean mixture to one tortilla and spread evenly.
- Place another tortilla on top and gently press down. Spread 1 Tbsp. hot sauce evenly on top.
- Sprinkle a few tablespoons of shredded cheese on top of the sauce. Bake for 3-4 minutes or until cheese is melted.
- Garnish with your favorite Mexican pizza toppings. Cut into quarters and enjoy!
