Homemade Mexican Pizza

Homemade Mexican Pizza is built from baked flour tortillas layered with a seasoned beef and refried bean mixture, hot sauce, and melted Colby jack cheese. The method crisps the tortillas and melds savory and spicy flavors into a handheld pizza inspired by a specific fast food item. Garnishes like tomato, avocado, and olives add freshness and texture, making it a filling, layered Mexican-style dish.

Description

This Homemade Mexican Pizza involves baking small flour tortillas until firm and chip-like, which creates a crisp base and top layer. The filling combines ground beef cooked with taco seasoning and mixed with refried beans. The seasoned beef and bean filling is spread on one tortilla, topped by another tortilla pressed down, then spread with hot sauce and shredded cheese before a final bake to melt the cheese.

The resulting layered dish offers a contrast of crispy tortillas and a rich, hearty interior with a mix of meat, beans, and melted cheese accented by spicy hot sauce. Serving it quartered with fresh garnishes such as tomatoes, jalapeño, avocado, black olives, and green onions adds brightness and variation in texture. Sour cream and guacamole complement the flavors and enhance the serving experience.

The notes suggest using branded Taco Bell ingredients to approximate the fast-food version or substituting red enchilada sauce for hot sauce. Adjusting toppings allows personal customization. This recipe is practical for making a copycat style Mexican pizza at home with familiar pantry items and simple layering and baking steps.

Ingredients

Servings
  • 10 (6 inch) flour tortilla fajita size
  • 1 Tbsp. olive oil
  • 1 lb. ground beef
  • 1 (16 oz. can) refried beans
  • 1 (1 oz. packet) taco seasoning
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 5 Tbsp. hot sauce
  • 8 oz. Colby jack cheese shredded
  • green onion for garnish
  • Roma tomato
  • avocado
  • black olive
  • jalapeño
  • hot sauce
  • sour cream
  • guacamole

Instructions

  1. Preheat oven to 300°F. Place 4 flour tortillas on a baking sheet at a time. Using a fork, poke surface of tortilla about 8 times. (This helps prevent the tortilla from bubbling). Bake for 15 minutes, then cool. Tortillas should be firm and chip-like. Repeat with the remaining tortillas.
  2. In a medium non-stick skillet over medium heat, add olive oil to pan. Once hot, add in the ground beef and cook until no longer pink. Season with salt, pepper and add in the taco seasoning. Stir to combine.
  3. Add in the can of refried beans and mix in with the meat.
  4. Add 1/2 cup of the beef/bean mixture to one tortilla and spread evenly.
  5. Place another tortilla on top and gently press down. Spread 1 Tbsp. hot sauce evenly on top.
  6. Sprinkle a few tablespoons of shredded cheese on top of the sauce. Bake for 3-4 minutes or until cheese is melted.
  7. Garnish with your favorite Mexican pizza toppings. Cut into quarters and enjoy!

Notes

  • Use branded Taco Bell refried beans, seasoning, and hot sauce for an authentic copycat flavor if available.
  • You can substitute red enchilada sauce in place of hot sauce to alter the flavor profile.
