Homemade Nando’s Boneless Chicken Thighs
Description
Homemade Nando’s Boneless Chicken Thighs uses skinless, boneless chicken thighs marinated in a peri peri-inspired mix of olive oil, dried chili flakes, crushed garlic, lime juice, smoked paprika, oregano, salt, and black pepper. The marinade imparts vibrant smoky and citrus notes with adjustable spiciness depending on the amount of chili flakes used.
After marinating for at least an hour, the chicken can be cooked quickly on a griddle pan, developing a nicely charred exterior while keeping the interior moist. Alternatively, roasting the thighs in a hot oven is an option that results in tender, flavorful chicken.
Serving with your preferred peri peri sides complements the dish. Portion guidance notes that two thighs per person are typically sufficient due to size differences from commercially served portions. The recipe is suitable for freezing cooked chicken thighs.
The chili flakes can be adjusted for heat preference, with rough quantities provided to indicate mild through to extra hot levels.
Ingredients
- 2 tablespoons olive oil
- 2 teaspoons dried chili flakes or to taste - see Note 1
- 4 cloves garlic crushed or grated
- lime juice of 1
- 2 teaspoons smoked paprika
- 2 teaspoons oregano
- ½ teaspoon salt (or to taste)
- black pepper to taste
- 8 chicken thigh see Note 2, skinless, boneless
Instructions
- Mix together all of the ingredients (except the chicken thighs!) in a large bowl to make the peri peri marinade.
- Place the boneless chicken thighs in the bowl of marinade, turning to coat each piece of chicken with marinade.
- Cover and marinate the chicken for 1 hour in the fridge, if you have the time. Alternatively, just continue with the recipe.
- Heat up a griddle pan (or regular frying pan) over a high heat for 1 minute. Fry the marinated chicken thighs in the griddle pan for 4 minutes on each side.
- (Alternatively, place the chicken thighs on a baking tray and roast in your oven, preheated to 220C / 200C fan / gas mark 7 / 425F, for 15 minutes, turning once.)
- Serve with all your favourite Nando’s sides!
Notes
- Adjust chili flakes to control spiciness: 1 tsp mild, 2 tsp medium, 3 tsp hot, 4 tsp extra hot.
- Two thighs per person usually suffice, but double the recipe if serving four or more per person.
