Homemade Nando’s Rainbow Slaw

A vibrant mix of cabbage, carrot, radish and spring onions, topped with mixed seeds, this delicious coleslaw is an easy homemade version of Nando’s Rainbow Slaw… except I’ve tweaked it to make it taste EVEN BETTER! (Serves 4-8, depending on appetite and accompaniments)

Ingredients
- 2 tablespoons mayonnaise I use Hellmann’s, good quality
- 2 tablespoons apple cider vinegar (or to taste - see Note 1)
- salt to taste
- black pepper to taste
- 150 g carrot grated on a coarse grater
- ½ teaspoon cumin seeds (optional)
- 250 g cabbage finely sliced, white
- 250 g red cabbage finely sliced
- 2 spring onion finely sliced, aka scallions, small
- 4 radish thinly sliced, small
- 2 tablespoons mixed seeds (I use Tesco Wholefoods 4 Seed Mix)
Instructions
- Place the mayonnaise, vinegar, salt and pepper in a large bowl and stir to combine.
- Add the grated carrot and cumin and stir well.
- Add the cabbage, spring onions and radishes, and stir again.
- Sprinkle over the mixed seeds as a garnish and serve.
Notes
- Using 2 tablespoons apple cider vinegar gives the coleslaw a really nice tang, which contrasts nicely with the creaminess of the mayo (and is similar to the tanginess of Nando’s Rainbow slaw). However, if you prefer a less tangy flavour, I recommend using only 1 tablespoon of the vinegar.
- Not suitable for freezing.
