Cookies
- ½ cup all-natural creamy peanut butter
- 5 tbsp pure maple syrup
- 1 cup almond flour
Filling
- ⅓ cup all-natural creamy peanut butter
Instructions
- First, preheat oven to 350 degrees Fahrenheit. Line a baking pan with parchment paper.
- In a mixing bowl, combine the peanut butter, maple syrup, and almond flour. Stir to combine.
- Roll the dough into ½ inch sized balls. Place 2 balls next to each other on the prepared pan. Continue for the remaining cookie dough.
- Gently press down on each dough ball with a fork, creating a criss-cross pattern.
- Then, bake for 10 to 12 minutes or until just set around the edges.
- Remove the pan from the oven.
- Once the cookies are fully cooled, spread peanut butter on half the cookies. Top with the other half of the cookies, creating a sandwich. Serve!

- Use all natural creamy peanut butter made from only peanuts and salt. Do not use a brand with added oils or sugar.
- Make the cookie dough balls small. Larger sized cookies tend to break apart for these cookie sandwiches.
- Bake the cookies until they are set around the edges and no longer gooey in the middle.
- Cool the cookies completely before adding the peanut butter filling.
- Store at room temperature in an airtight container for up to 4 days.
