Description

This Homemade Pocky recipe starts by mixing dry ingredients then cutting in cold butter until crumbly. Milk is added to bring the dough together, which is then chilled to firm up. Rolling the dough to 5mm thickness and cutting into thin sticks creates the slender form characteristic of pocky. Baking at 180°C for 15 minutes crisps them without browning excessively.

After cooling, the biscuit sticks are coated in melted milk chocolate and topped with crushed almonds for added texture and flavor. This coating step allows personalization with other toppings as desired.

The dough stores well when wrapped tightly in cling film, suitable for refrigeration up to three days or freezing for longer storage. This flexibility helps manage batch preparation and baking timing.

Ingredients

  • 150 g plain flour
  • 1 tbsp sugar
  • salt a pinch
  • 50 g butter unsalted
  • 3 tbsp milk
  • Topping suggestions
  • milk chocolate I used 50g of milk chocolate melted
  • 2 tbsp almond crushed

Instructions

  1. Add all the dry ingredients into a food processor and pulse one or two times.
  2. Add the chopped butter into the food processor and pulse two or three times until resembles coarse bread crumbs.
  3. Add the milk and pulse again.
  4. Wrap the ball of dough with saran wrap/cling film and leave it in the fridge for 30 minutes.
  5. Preheat the oven to 180 degrees Celsius (or 350 degrees Fahrenheit).
  6. Roll the dough out until it's about 5mm thick.
  7. Form it into a rectangle shape, cutting off the excess dough on the sides. Then cut it into thin pieces about 5mm (or 0.19 inches) wide.
  8. Place the sticks in the oven and bake for 15 minutes.
  9. Coat with melted chocolate, and any other toppings of your choice.

Notes

  • The cookie dough can be refrigerated for about 3 days if you prefer to bake smaller batches later.
  • For longer storage, wrap the dough tightly in cling film twice and place in a zip lock bag before freezing, where it keeps for about 3 months.
