Description
This Teriyaki Chicken recipe combines chicken thighs marinated in a blend of sake or white wine, sugar, mirin, soy sauce, and optional fresh ginger and garlic. The marination allows the flavors to penetrate the meat, tenderizing and seasoning it. After marinating for at least 30 minutes or preferably several hours, the chicken is cooked in a skillet over medium heat until browned on both sides.
Once the chicken is removed, the marinade is brought to a rolling boil and simmered until thickened, creating a sticky teriyaki sauce. The chicken is then returned to the pan and coated thoroughly with the glaze. This finish provides a balanced combination of umami, sweetness, and a slight tang from the mirin and sake. The chicken remains moist from the marinade and pan-searing.
Teriyaki Chicken can be served over rice or alongside vegetables, making a simple yet flavorful main dish for a casual meal.
Ingredients
- 6 chicken thighs , boneless and skinless
- 1/4 cup sake (or white wine)
- 1/4 cup sugar
- 1/2 cup mirin
- 1/2 cup soy sauce
- 1 tablespoon ginger optional, grated
- 1 tablespoon garlic optional, grated
Instructions
- Put all the ingredients into a large Tupperware or resealable bag and marinate for at least 30 minutes but preferably 3-4 hours.
- In a large skillet add the chicken thighs on medium heat, cooking 4-5 minutes on each side before removing from the pan and adding in the marinade.
- Let the marinade come to a rolling boil and cook on medium heat until thickened (4-5 minutes) before adding the chicken back in to coat.
