Description
The recipe begins by pounding chicken breasts to an even thickness to ensure quick, uniform cooking. The meat is seasoned simply with kosher salt and coarsely ground black pepper, then dredged in flour, dipped in beaten eggs, and coated liberally with panko breadcrumbs. After resting briefly to set the crust, the chicken is deep fried in vegetable oil until crisp and golden on each side.

Ingredients
- 4 chicken breast boneless and skinless
- 1/2 teaspoon kosher salt
- 1/4 teaspoon black pepper coarse ground
- 1/4 cup flour
- 2 large egg beaten
- 2 cups panko bread crumbs
- vegetable oil for frying
Instructions
- Using a mallet pound the chicken to an even thickness, about 1/2" thick.
- Season both sides of the chicken with the salt and pepper.
- Coat each cutlet with the flour before dredging in the egg yolks then pressing into the panko crumbs.
- Rest the breaded chicken pieces on a baking sheet for ten minutes before frying.
- Fry in a large skillet with at least 2 inches of oil on medium heat until cooked through and golden brown, about 4-5 minutes on each side.
