Description
To make Homemade Raffaello Balls, almonds are gently roasted to develop golden toasty notes, then set aside to cool. Shredded unsweetened coconut is combined with sweetened condensed milk, allowing the coconut to absorb the liquid for about ten minutes, creating a sticky, moldable mixture. Small portions of this mixture are flattened by hand, encasing a single roasted almond before rolling into spherical shapes. Each ball is then rolled in additional shredded coconut, enhancing the outer coconut flavor and texture. After shaping, the balls are chilled in the refrigerator until firm enough to hold their shape.
The final product balances the rich sweetness of condensed milk with the natural almond crunch and fragrant coconut. These treats do not require baking and store well in airtight containers when refrigerated. Slight dampening of hands or using coconut oil can ease shaping by preventing sticking.
Ingredients
- 30 almonds Note 1, whole
- about 3 cups coconut 250 g/ 8.5 oz, Note 2, unsweetened, shredded
- 1 can sweetened condensed milk 400 g/ 14 oz
- ⅓ cup coconut extra for coating the balls, shredded
Instructions
- Roast the almonds in a small pan without adding any fat. Shake the pan often until the almonds are golden on both sides. Don't leave them unattended; this will only take a few minutes and burn in seconds if you don’t watch out. Transfer them to a plate immediately and let them cool.
- Mix the coconut and the sweetened condensed milk in a large bowl. Leave it to stand for about 10 minutes so the shredded coconut completely absorbs the milk.
- Shape the balls (Note 2). Take a small amount of the coconut mixture in your hand, flatten it, place a roasted almond in the middle, and roll the ball. The ball should be more or less the size of a larger cherry or the size of a real Raffaello.
- Roll the balls into the extra coconut in a bowl and place them on a platter.
- Chill the balls for a few hours until they become firm. Store them in an airtight container and keep them refrigerated.
Notes
- Use one almond per ball to ensure a crunchy center; blanched almonds provide a cleaner white look but skins are acceptable.
- Be aware that shredded and desiccated coconut differ in weight per cup; adjust quantity as needed for desired mixture consistency.
- Moistening hands slightly with water or coconut oil helps prevent the mixture from sticking while shaping the balls.
