Description

This raspberry sauce begins by boiling half the raspberries with sugar, dissolving the sugar to form a syrupy base. Adding remaining raspberries, lemon juice, lemon zest, and vanilla combines fresh fruit flavor with citrus brightness and a hint of vanilla aroma. Cornstarch mixed with water is then incorporated to thicken the sauce over medium-low heat without scorching.

The careful low-heat simmer prevents burning and allows the flavors to meld fully. The finished sauce has a balanced sweetness and bright acidity with a smooth, pourable texture. It works well as a topping for desserts or breakfast dishes.

  • 2 ½ cups raspberries fresh
  • ¾ cup sugar
  • 1 TBS lemon juice fresh
  • 1 tsp lemon zest fresh
  • ½ tsp vanilla extract
  • 1 tsp cornstarch
  • 1 TBS water

Instructions

  1. Add 1/2 of the raspberries and the sugar to a saucepan. Heat the mixture over medium and bring to a boil, stirring often until the sugar is dissolved.
  2. Reduce heat to medium-low and add the remaining raspberries, vanilla, lemon juice, and lemon zest. Stir to mix in.
  3. Combine the cornstarch and one TBS of water in a small cup and mix well.
  4. Add cornstarch mixture to the hot raspberry mixture in the pan. Stir and boil over medium-low heat for 4-5 minutes or until the sauce has thickened enough to coat the back of a spoon.
  5. Remove the pan from heat and either serve warm or allow to cool and serve at room temperature.

Notes

  • Keep heat medium-low to avoid scorching and encourage flavor melding.
  • Store in an airtight container in the refrigerator for up to one week.
