Homemade Snickers With Dates

This Homemade Snickers recipe uses soaked dates blended into a base with natural peanut butter, coconut milk, maple syrup, and cacao powder, creating a soft, sweet, and nutty bar. The addition of crushed peanuts adds crunch, while a smooth caramel sauce made from almond butter, coconut oil, and maple syrup tops the bars. The bars set in a candy mold for portioning, resulting in a chewy, rich snack alternative to traditional candy bars.

Description

Homemade Snickers With Dates combines softened dates soaked in warm water with natural peanut butter and coconut milk to create a smooth, sticky base. The mixture is thickened with arrowroot powder and enhanced with a touch of maple syrup, cacao powder, and sea salt for a balanced sweet and slightly chocolatey flavor. Crushed peanuts are incorporated and sprinkled on top to provide texture contrast. A homemade caramel sauce, made by gently melting coconut oil and whisking in almond butter and maple syrup, is poured over the set bars before final chilling.

The bars hold together firmly yet remain tender due to the hydration from soaked dates and the binding properties of peanut butter and arrowroot powder. Processing the dates into a fine paste and careful heating of the caramel components prevent a gritty texture. Slight pressing of peanuts into the bars secures them, ensuring a cohesive bite that echoes the nutty elements of traditional Snickers.

The recipe yields 20 minibars, each serving two bars, making them convenient for portion-controlled snacking. The recipe advises soaking dates to facilitate smooth blending and cautions on minimal water addition to maintain bar firmness. Using runny almond butter and gently heated coconut oil ensures a smooth caramel topping without clumps. These bars can serve as a homemade candy alternative with control over ingredients and natural sweetness.

Preparation requires attention to the temperature of the caramel mixture before portioning, preventing it from overheating to maintain consistency. Cooling steps allow the mixture to set properly in silicone molds. The recipe notes variations such as substituting cocoa butter for coconut milk and emphasizes ingredient choices like canned coconut milk for thickness.

Ingredients

Servings

For the date bar

  • 1 cup dates soaked in warm water for 20 minutes
  • ¼ cup peanut butter natural
  • 3 tablespoons coconut milk
  • cup maple syrup
  • 1.5 tablespoons cacao powder
  • 1 teaspoon arrowroot powder
  • ¼ teaspoon salt sea salt
  • 2 tablespoons peanuts crushed or chopped

For the caramel sauce

  • cup almond butter
  • 2 teaspoon coconut oil measured solid
  • 1 teaspoon maple syrup

Instructions

  1. In a small pot, heat the peanut butter, cacao butter, and maple syrup over low heat until melted.
  2. While heating, drain the dates and process in a food processor to make date paste. You may need to scrape down the sides. If they’re not processing, add one tablespoon of water but no more.
  3. Once the peanut butter mixture is combined, pour into the food processor along with the sea salt and cacao powder Process until smooth.
  4. Scrape the mixture into a bowl and mix in the arrowroot powder. Mix well.
  5. Let sit for five full minutes.
  6. Using a silicone spatula, portion the mixture into a candy mold. Press down so no bubbles remain and scrape the surface so that all bars are even.
  7. Sprinkle the peanuts over the bars and press down slightly so they stick.
  8. Make the caramel topping by heating the coconut oil over very low heat until just melted. Mix in the almond butter, vanilla, and maple syrup until smooth.
  9. Let the mixture cool slightly but no harden and portion it into a plastic baggie.
  10. Cut the tip off the baggie and begin to drizzle the caramel over the bars.
  11. Pop into the freezer and let sit for sixty minutes. Then, carefully pop the homemade snickers bars out of the molds and store them!

Notes

  • Soak dates in warm water to ease blending into a smooth paste.
  • Add as little water as possible when processing dates to keep bars firm.
  • Use canned coconut milk (the thick part) instead of carton for better texture.
  • Choose runny almond butter—not the solidified bottom layer—for the caramel sauce.
  • Heat coconut oil gently and mix thoroughly with almond butter for a smooth caramel topping.
  • Ensure the caramel mixture is warm but not hot before portioning to avoid texture issues.
