Description

After kneading and resting, the dough is rolled out thinly and cut into equal pieces. The combination of the gentle leavening from baking powder and careful frying temperature results in a delicately textured fried bread that is both soft inside and crisp outside. These sopapillas work as a simple sweet treat or dessert with their light sweetness and honey drizzle.
To achieve the best puff, it is important to roll the dough evenly and maintain the right oil temperature. Fry in small batches to give them space to puff properly. Sopapillas are best served fresh, but can be reheated in an oven though they may lose some puffiness.
Ingredients
- 1 ¼ cup all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon granulated sugar
- ½ teaspoon salt
- 2 tablespoons vegetable shortening
- ½ cup water not boiling, hot
- 6 cups vegetable oil for frying (48 ounces)
- ½ cup powdered sugar for dusting
- ¼ -½ cup honey for drizzling
Instructions
- Whisk flour, baking powder, sugar, and salt together. Cut in the shortening and combine thoroughly.
- Add water and stir until the dough starts to come together.
- Sprinkle a bit of extra flour on a countertop and turn the dough out onto it.
- Knead it for about 5 minutes, adding a sprinkle of flour if it becomes sticky.
- Place the dough back in the mixing bowl, cover with a towel and let it rest for 10 minutes.
- Meanwhile, heat oil to 350°F in a deep-frying pan over medium heat.
- While the oil is heating, roll the dough out to between 1/8" to 1/4" thickness
- Using a pizza cutter, cut the dough into 16-20 equal pieces.
- Carefully drop 4-5 pieces into the hot oil and fry for 2-3 minutes on each side or until both sides have puffed up and turned a golden.
- Remove from the oil and drain them over a cookie cooling rack or a plate with a paper towel.
- Once cooled, sprinkle them with a bit of powdered sugar and serve with honey for drizzling.
Notes
- Roll dough evenly between 1/8" and 1/4" thick for proper puffing.
- Maintain hot oil temperature before frying to avoid soggy, oily sopapillas.
- Fry in small batches to allow room for puffing and even cooking.
- Serve immediately for best texture and puffiness.
- Reheat in a 350°F oven for 10-15 minutes, though puffiness may reduce.
