Homemade Strawberry Mousse
Description
Homemade Strawberry Mousse begins by pureeing strawberries with sugar, then straining to remove seeds and creating a smooth fruit mixture. This is simmered briefly to thicken and combined with dissolved gelatin to provide structure once chilled. After cooling until slightly thickened, the base is whipped with vanilla and folded into whipped heavy cream. The mousse is spooned into individual servings and refrigerated for several hours to firm up completely. The finished mousse has a light, airy texture balanced by the fresh, fruity sweetness of strawberries. The use of gelatin ensures it holds shape without heaviness. Optional red food coloring can be added for a brighter visual appearance. Leftover mousse will keep refrigerated for up to three days or can be frozen in portions for longer storage.
Ingredients
- 3 cups strawberries rinsed and hulled (1 ½ cups strawberry puree)
- ½ cup granulated sugar
- ¼ cup water cold
- 1 packet gelatin 0.25 oz or 7 g per package, unflavored
- 1 cup heavy whipping cream
- 1 teaspoon vanilla extract
- 1-2 drops red food coloring optional
Instructions
- Combine strawberries and sugar in a food processor and pulse until smooth. Strain with a fine mesh strainer into a small saucepan. Bring to a boil, reduce heat, and simmer for 3-4 minutes or until slightly thickened.
- Combine cold water and gelatin, mix well, and let rest 1 minute. Add to the berry mixture and stir. Simmer on medium-low heat for about 2 minutes more or until gelatin is completely dissolved.
- Pour into a bowl and refrigerate to cool until slightly thickened, about 45-60 minutes.
- Once cooled and thickened, mix the strawberry mixture with a hand mixer for 2 minutes.
- Add heavy cream and vanilla. Continue mixing until thick and fluffy, about 3-5 minutes.
- Spoon the mousse into dessert cups and refrigerate for at least 2 hours before serving.
Notes
- Straining strawberry puree removes seeds for a smoother texture but can be skipped if preferred.
- Unflavored gelatin is found near other gelatin or Jell-o products in grocery stores.
- Other berries can substitute for strawberries using about 1 ½ cups of fruit puree.
- Keep leftover mousse covered in the refrigerator for up to 3 days; it can be frozen for up to 2 months.
