Homemade Sucker Recipe
Description
The recipe begins with combining sugar, water, and corn syrup in a pan, cooking the mixture to 300°F—the hard crack stage—using a candy thermometer to ensure proper temperature for a firm texture. Flavoring and food coloring are added toward the end, stirred gently, and then the hot candy is poured into pre-prepared molds with sticks.
The candy sets quickly, becoming hard and shiny once cooled. Additional steps for butterscotch or caramel suckers involve adding melted butter at a lower temperature before continuing the cooking process to develop deeper flavors and colors.
These homemade suckers are traditional hard candies suitable for gifting or celebrating, customizable by color and flavor according to preference.
After making the candy, cleaning the pot is easier by boiling water inside it to dissolve any residual sugar carefully adhering to the surface.
Ingredients
- 1 cup sugar
- 1/2 cup water
- 1/3 cup corn syrup
- 1/4 tsp Food Coloring
- 3-5 drops flavoring cherry or cinnamon
- sucker sticks
- Candy thermometer
Instructions
- Put molds and sticks together. Place on cookie sheet and spray. Put cookie sheet in freezer until candy is ready.
- Put all of the ingredients except flavoring and color in a pan. Cook to hard crack stage (300 degrees).
- Add flavoring and coloring. Stir about two minutes.
- Pour into molds. Let set for 10-15 minutes before removing the molds and taking the suckers off the pan.
EXTRA STEP FOR BUTTERSCOTCH/CARAMEL SUCKERS
- *Add ½ c. melted butter at 275 degrees. Mix and bring to 300 degrees and continue with Steps 3 & 4
Notes
- Prepare molds and sticks beforehand and chill them to help the candy set quickly and maintain shape.
- Carefully monitor temperature with a candy thermometer to reach the hard crack stage (300°F) for proper sucker hardness.
- For butterscotch or caramel flavor, add melted butter at 275°F, mix, then continue cooking to 300°F before flavoring and pouring.
- Clean cookware by boiling water in it post-candy making to loosen sticky sugar residue safely.
