Description
Homemade Wontons are a traditional dumpling made by wrapping a seasoned pork and shrimp filling in thin square wrappers. The filling is prepared by mixing ground pork with chopped raw shrimp, green onions, ginger, and a selection of seasonings including soy sauce, Shaoxing wine, salt, chicken bouillon powder, and sesame oil, resulting in a well-balanced, aromatic mixture. The filling is kneaded until it develops strands indicating good binding.
The wontons are assembled by placing the filling in the center of each wrapper and folding them into tightly sealed diamond shapes, expelling any air pockets to prevent bursting during cooking. The recipe allows freezing wontons uncooked for convenience. To cook, they are boiled in water for several minutes until tender and cooked through, producing delicate dumplings with a savory filling.
These wontons can serve as appetizers or be added to broth for soups. Their combination of pork and shrimp offers a layered texture and flavor. The recipe yields approximately 16 large wontons when using 4 inch square wrappers, with more if smaller wrappers are used.
Ingredients
- 200 g ground pork
- 100 g Shrimp chopped, raw
- 1 tablespoon pork lard optional
- 2 talks green onion chopped
- 1 tablespoon ginger finely minced
- 1 tablespoon soy sauce
- 1 tablespoon Shaoxing wine
- ½ teaspoon salt sea salt
- ½ teaspoon chicken bouillon powder
- 2 teaspoon sesame oil
- ½ pkg wonton wrappers if using smaller wrappers, you will yield more wontons, 4" x 4", ½ lb
Instructions
Make the filling:
- In a large mixer bowl fitted with a paddle attachment, combine the ground pork, shrimp, pork lard (if using), green onion, ginger, soy sauce, Shaoxing wine, sea salt, chicken bouillon powder (if using) and sesame oil.
- Turn on the mixer on low speed and mix for 4-5 minutes, until the mixture is well combined and long strands start to appear.
Assemble:
- Arrange the square wrapper on your work surface as a diamond shape.
- Place about 1 tablespoon of filling (use less if your wrappers are smaller) in the center.
- Bring the bottom corner of the wrapper over the filling, tuck and pinch in the sides firmly expelling any air, and seal well.
- Place onto a baking sheet lined with parchment paper or a plate lightly oiled with sesame oil.
- Repeat with the remainder.
- At this point, you can freeze the uncooked wontons, or cook the wontons in boiling water.
Cook:
- Bring a pot of water up to a boil.
- Add wontons into the water and cook for 5-6 minutes, or until they float and the filling is cooked through.
- Remove with a slotted spoon into serving bowls. Serve with hot soup, noodles, or with chili oil.
Notes
- The recipe yields about 16 large wontons using 4" by 4" wrappers; smaller wrappers will produce a greater number.
- Wontons can be frozen uncooked on a baking sheet before transferring to a bag for storage.
- Ensure to firmly pinch and seal sides when wrapping to avoid filling leakage during cooking.
