Homemade Yellow Cake Mix

This homemade yellow cake mix features all-purpose flour, sugar, baking powder, salt, vegetable shortening, and vanilla extract, combined into a crumbly base that can be stored for months. When ready to bake, the mix combines with eggs, milk, and oil to create a classic yellow cake batter. The resulting cake bakes to a moist, tender crumb with a traditional sweetness and vanilla flavor suitable for birthdays or other celebrations.

Description

Homemade Yellow Cake Mix is made by whisking together flour, sugar, baking powder, and salt, then incorporating vegetable shortening and vanilla extract using a mixer until crumbly. This dry mix can be stored in a sealed container for up to three months, allowing for convenient cake preparation. When baking, eggs, milk, and vegetable oil are added to the mix and blended to form a smooth batter. The cake is baked in greased pans at 350°F until a toothpick inserted comes out clean, resulting in a tender crumb with classic yellow cake sweetness and vanilla notes.

The cake's texture is light yet moist, and the formulation allows for versatile serving occasions. It can be layered with frosting or served plain. Variations include adding pumpkin pie spices, rainbow sprinkles, or almond extract to change the flavor profile.

This recipe supports substitutions in milk and oil types without compromising texture significantly. It also offers a base for different flavored cakes. Nutrition values are estimations and depend on the additions used in the final cake.

Ingredients

Servings

Cake Mix

  • 2 ⅓ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable shortening
  • 1 teaspoon vanilla extract

To Bake a Cake

  • 1 recipe cake mix from ingredients above
  • 2 egg at room temperature, large
  • 1 cup milk at room temperature
  • 2 tablespoons vegetable oil

Instructions

To Make the Mix

  1. In a large bowl, whisk the flour, sugar, baking powder, and salt together until well-combined.
  2. Add the shortening and vanilla.
  3. Use an electric mixer on low speed to mix everything together. The mixture will be in small crumbs once combined.
  4. Store the cake mix in a large resealable bag or large glass jar with a tight-fitting lid in a cool, dry place for up to 3 months.

To Bake a Cake

  1. Preheat oven to 350F. Grease a 9x13-inch baking pan or 2 9-inch round baking pans. Set aside.
  2. Add the cake mix to a large bowl.
  3. Add eggs, milk, and oil to the cake mix.
  4. Mix with an electric mixer on low speed for 30 seconds.
  5. Increase speed to medium, and continue to mix for 1 minute, scraping down the bowl as needed.
  6. Spread the batter in the prepared baking pan.
  7. Bake until a toothpick inserted in the center comes out clean. For a 9x13 pan, it will take approximately 30-35 minutes. For the 9-inch round baking pans, it will take approximately 25-30 minutes.

Notes

  • Milk can be any dairy milk (skim to whole) or nondairy alternatives like almond milk.
  • Vegetable oil can be substituted with similar oils such as canola oil.
  • To create a spice cake, add 1.5 tablespoons pumpkin pie spice to the flour before mixing.
  • For a confetti cake, fold in 1/2 cup rainbow sprinkles into the finished cake mix.
  • For almond flavor, reduce vanilla to 1/2 teaspoon and add 1 teaspoon almond extract.
  • Nutrition values are estimates for one serving of prepared cake and may vary with modifications.
