Description
This traybake uses vegetarian sausages placed atop a mixture of sweet potato wedges, baby potatoes, red onion, bell peppers, zucchini, cherry tomatoes, and Chantenay carrots. The vegetables are tossed with a dressing made from olive oil, honey, wholegrain mustard, lemon juice, parsley, salt, and pepper to enhance their flavor before roasting.
The recipe directs roasting the vegetables first for 20 minutes, then adding the sausages on top for another 20 minutes. This technique ensures the vegetables begin cooking and develop some crispness before the sausages cook through. The end result is a tray of tender, slightly caramelized vegetables and browned sausages with a honey-mustard glaze.

Ingredients
- 4 vegetarian sausages
- 1 sweet potato peeled and cut in to small wedges
- 6 baby potato washed and cut in to wedges
- 1 red onion peeled and cut in to chunks
- 2 bell pepper cut in to chunks
- 1 zucchini sliced, aka courgette
- 8 cherry tomato
- 8 carrot Chantenay variety
- 2 tablespoon olive oil
- 2 tablespoon honey
- 2 tablespoon wholegrain mustard
- 0.5 lemon (juice only)
- 1 pinch sea salt
- 1 pinch black pepper
- 1 handful parsley fresh
Instructions
- Preheat your oven to 190°C/170°C(fan)/375°F/Gas 5.
- In a large bowl, add 1 Sweet potato, 6 Baby potatoes, 1 Red onion, 2 Bell peppers, 1 Courgette (zucchini), 8 Cherry tomatoes and 8 Chantenay carrots.
- In a separate small bowl, mix together 2 tablespoon Olive oil, 2 tablespoon Honey, 2 tablespoon Wholegrain mustard, juice of 0.5 Lemon1 handful Fresh parsley and 1 pinch Sea salt and ground black pepper. Pour over the vegetables and mix well.
- Add the vegetable mixture to a baking tray and put into your oven for 20 minutes.
- Take the tray out of the oven and place 4 Vegetarian sausages on top of the vegetables. Put the tray back in the oven for another 20 minutes.
- Serve with a green salad, slaw and some hot sauce!
Notes
- Arrange ingredients in a single layer on the baking tray to ensure the vegetables roast instead of steaming and become crispy.
- If using broccoli, add it only when placing the sausages on the tray to avoid overcooking.
- If the tray is small, divide vegetables between two trays for better roasting results.
- The traybake pairs well with green salad, slaw, or hot sauce; skip gravy and try homemade healthier ketchup as an alternative.
