Honey and Mustard Sausage Traybake

Report
The Honey and Mustard Sausage Traybake combines vegetarian sausages with a colorful mix of roasted vegetables coated in a honey, mustard, and lemon dressing. Roasting the vegetables alongside sausages gives a tender, caramelized result with a balance of sweet, tangy, and savory flavors. The dish serves well as a simple, one-tray meal.

Description

This traybake uses vegetarian sausages placed atop a mixture of sweet potato wedges, baby potatoes, red onion, bell peppers, zucchini, cherry tomatoes, and Chantenay carrots. The vegetables are tossed with a dressing made from olive oil, honey, wholegrain mustard, lemon juice, parsley, salt, and pepper to enhance their flavor before roasting.

The recipe directs roasting the vegetables first for 20 minutes, then adding the sausages on top for another 20 minutes. This technique ensures the vegetables begin cooking and develop some crispness before the sausages cook through. The end result is a tray of tender, slightly caramelized vegetables and browned sausages with a honey-mustard glaze.

Serving suggestions include pairing with a green salad, coleslaw, or a hot sauce to complement the flavors. The dish is convenient for an all-in-one meal with balanced vegetables and protein.

Spreading ingredients evenly on the tray is important to avoid steaming the vegetables; if needed, divide into two trays. Adding broccoli later during cooking prevents it from overcooking. Alternatively, serve with homemade ketchup.

Notes

  • Arrange ingredients in a single layer on the baking tray to ensure the vegetables roast instead of steaming and become crispy.
  • If using broccoli, add it only when placing the sausages on the tray to avoid overcooking.
  • If the tray is small, divide vegetables between two trays for better roasting results.
  • The traybake pairs well with green salad, slaw, or hot sauce; skip gravy and try homemade healthier ketchup as an alternative.
