Honey Lime Chicken
Description
Honey Lime Chicken uses skin-on chicken thighs that are rubbed with minced garlic and coated in a marinade of honey, soy sauce, lime juice, cayenne pepper, and salt. Baking at a high temperature ensures the chicken cooks through while the marinade thickens and caramelizes on the surface. After most of the cooking, the chicken is broiled briefly to char the skin slightly, adding texture and depth.
The flavor combines the natural sweetness of honey, the acidity of lime, the umami of soy sauce, and subtle heat from cayenne. The skin crisps up under the broiler, contrasting with the moist chicken beneath. Parsley adds a fresh herbal note, and lime wedges encourage an additional citrus squeeze at serving.
This dish can be served as a main course alongside vegetables or rice, showcasing a lively marinade that penetrates the chicken. The recipe can be adapted by marinating ahead to deepen flavor or cooked in a skillet if desired, with a caution to avoid burning the honey in pan cooking.
Ingredients
- 1 lb (500g) chicken thighs deboned, skin-on
- 3 cloves garlic minced
- 2 tablespoons honey
- 1.5 tablespoon soy sauce
- 2 tablespoons lime juice
- 3 dashes cayenne pepper
- 1 big pinch salt
- parsley chopped
- lime wedges
Instructions
- Preheat the oven to 400°F (207°C). Rub the minced garlic on the chicken thighs with your hands. Add honey, soy sauce, lime juice, cayenne pepper, and salt to the chicken. Stir to combine well. Transfer the chicken and the honey mixture to a baking sheet lined with aluminum foil. Cover the chicken with aluminum foil to prevent burning.Pro tip: Double the marinade if you want it to be more “saucy.”
- Bake the chicken for 20 minutes, or until cooked. If the sauce pools at the bottom of the foil, spoon and brush the sauce over the chicken. Broil the chicken for 1 minute or until the chicken skin is charred. Remove from heat, garnish with parsley. Squeeze the lime wedges over the chicken before serving.
Notes
- Marinate chicken for about 30 minutes to enhance flavor depth.
- Boneless, skinless chicken won't brown as deeply; skip broiling to prevent drying out.
- The recipe can be prepared in a skillet, turning frequently to avoid burning honey.
