Ingredients

  • 8 chicken drumstick
  • 1 lime (juice and zest only)
  • 3 tablespoon olive oil
  • 1 tablespoon ginger grated, fresh
  • 4 garlic clove
  • 4 tablespoon honey
  • 2 tablespoon soy sauce
  • 5 g cilantro fresh
  • 1 pinch black pepper ground
  • 1 red chili pepper optional if you want some spice to it

Instructions

  1. Preheat your oven to 200°C/180°C(fan)/400°F/Gas 6.
  2. Mix together all the ingredients for the marinade.
  3. Coat the chicken with the marinade and leave in the fridge for at least an hour.
  4. Put the chicken on a baking tray and cook in the oven for 25 minutes.
  5. Transfer to the BBQ to finish it off for a further 10 minutes.

Notes

  • Add chili sauce to the marinade for extra spice if desired.
  • If no BBQ is available, bake the chicken in the oven for 30 minutes or until cooked through.
  • Boneless chicken thighs can be used instead of drumsticks as a substitute.
