Ingredients

Servings
  • 4 ounce salmon fillets
  • salt freshly ground
  • black pepper freshly ground
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 2 cloves garlic , finely minced
  • 1/2 cup orange juice fresh
  • 1/2 cup chicken broth
  • 2 tablespoons white wine dry
  • 2-3 tablespoons honey
  • 1 teaspoon cornstarch , dissolved in 2 teaspoons water
  • 1 teaspoon rosemary optional for herb flavor variation, finely minced leaves, or thyme leaves
  • 1 orange , sliced into rounds or half rounds

Instructions

  1. Blot the salmon fillets dry with paper towels. Sprinkle with salt and pepper. Heat the oil and butter in a frying pan over medium-high heat. Fry the salmon on each side for 4-5 minutes or until cooked through (length of time will depend on the thickness of the fillets. If using skin-on salmon, fry the side without the skin first). Transfer the salmon to a plate and set aside.
  2. Add the garlic to the pan and cook for a minute. Add the orange juice, chicken broth, and white wine. Bring to a boil, reduce the heat to a steady simmer and let the liquid reduce to nearly half. Stir in the cornstarch slurry and simmer another minute until slightly thickened. Stir in the honey. Position the orange slices in the pan and simmer for 2-3 minutes. Taste the sauce and add more salt, pepper or honey as desired. Position the salmon fillets in the pan, spoon the sauce over, and simmer 1-2 minutes or until heated through. Serve immediately arranged with the orange slices and some sauce spooned over the fillets.
