Honey Roasted Caramel Corn

Honey Roasted Caramel Corn is a honey twist on the classic old-fashioned treat. We pop our own popcorn from kernels, candy them with honey, and mix in honey-roasted peanuts for the ultimate caramel corn goodness.

Ingredients
- 1/2 cup popcorn kernels
- 3 tablespoons vegetable oil
- 1 cup honey roasted peanuts
- 1 cup brown sugar
- 1/4 cup honey
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/4 teaspoon baking soda
- 1/2 teaspoon vanilla extract
Instructions
- Place the popcorn kernels in a large pot. Add the cooking oil. Cover and cook over medium heat until most kernels have popped and there are several seconds between pops.
- Spread the popped popcorn on a large baking sheet. Add the roasted peanuts.
- In a small saucepan, mix brown sugar, honey, butter, and salt. Bring to a boil over medium heat. Simmer for 5 minutes, stirring constantly.
- Remove from heat. Stir in baking soda and vanilla extract. Pour immediately over the popcorn mixture.
- Bake in a 250°F oven for 1 hour, stirring every 15 minutes.
- Line a clean baking sheet with wax paper. Transfer the caramel corn onto the wax paper, separating into pieces. Allow to cool completely.
- Serve or store in an airtight container.
