Honey Roasted Potatoes

Potatoes are roasted in a delicious honey butter dijon sauce. This is the best potato side dish to go along with your favorite steak or pork chop main dish!

Ingredients

  • 2 pounds red potatoes cubed
  • 1 small white onion diced
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1 pinch black pepper

Instructions

  1. Preheat oven to 375 degrees. Lightly grease a 9x13 baking pan with nonstick cooking spray.
  2. Spread out the cubed potatoes in the pan in a single layer.
  3. In a small saucepan, melt the butter over medium heat. Add in the onions and saute for about 3 minutes. Add in the honey, mustard, oregano, salt, pepper and stir to combine.
  4. Drizzle the butter mixture over the potatoes.
  5. Bake for about 35 minutes until potatoes are cooked through. Actual baking time will depend on how big you cut your potato pieces.
