Honey Butter Roasted Sweet Potatoes

These quick and easy Honey Butter Roasted Sweet Potatoes are roasted until tender, sliced and drizzled with a melted honey butter and paprika sauce.

Ingredients

  • 4 sweet potatoes
  • 3 tbsp butter
  • 2 tbsp honey
  • 1 tbsp paprika
  • 2 tbsp chopped fresh cilantro
  • 1/2 cup pomegranate arils

Instructions

  1. Preheat oven to 400°F.
  2. Pierce sweet potatoes with a fork and place potatoes on a lined baking sheet pan. Bake for 1 hour or until tender. Allow to cool slightly and slice potatoes in half horizontally. Arrange cut side up in a serving dish.
  3. Combine butter, honey, and paprika in a microwave-safe bowl. Microwave at high 1 minute. Drizzle honey butter mixture evenly over potato halves. Sprinkle potato halves with cilantro, pomegranate arils and sea salt flakes (optional).

Notes

  • Pomegranate arils and sea salt flakes are optional. Feel free to omit or substitute kosher salt for the flakes.
