Description

The recipe begins by marinating thinly sliced steak strips in soy sauce and beaten egg to tenderize and flavor the beef. The strips are then dredged in salted flour and deep-fried until crisp and golden. Separately, a sauce is made by sautéing onion and garlic, then simmering with soy sauce, honey for sweetness, rice vinegar for acidity, hoisin or oyster sauce for depth, and water to create a balanced coating.

Fried beef strips are combined with the sauce to coat evenly, preserving their crisp texture while absorbing flavor. Cooked noodles are added and tossed to combine, softening slightly while carrying the sauce. This dish balances crispy meat with tender noodles and a sticky, savory-sweet sauce.

Ingredients

Servings
  • 500 g steak thinly sliced
  • 1 egg
  • 2 tbsp soy sauce
  • 2 cups flour seasoned with salt
  • cooking oil for frying

For the sauce

  • 1 onion finely chopped
  • 3 garlic crushed, cloves
  • 1/3 cup soy sauce
  • 3-4 tbsp honey to taste
  • 1 tsp rice vinegar
  • 1 tbsp hoisin sauce or oyster sauce
  • ½ cup water
  • 500 g noodles to serve
  • spring onions to serve, sliced

Instructions

  1. Place the steak in a bowl and add the soy sauce and egg. Mix together well then set aside. 
  2. Fry the onion and garlic in a large pan until fragrant. Add the soy sauce, honey, Hoisin/Oyster sauce, vinegar and water.
  3. Bring to a simmer and allow to reduce by half. Remove from the heat and set aside.
  4. Heat enough oil to deep fry the beef in a pot set over high heat.
  5. Dip the steak strips into the flour, making sure each strip is well-coated. Shake off the excess then add to the hot oil, frying the beef in batches until golden brown and crisp.
  6. Remove with a slotted spoon and allow to drain on kitchen towel. 
  7. Place the sauce back on the heat then add the beef and toss well to coat the meat in the sauce. Add cooked noodles and season with more soy sauce, honey or vinegar if needed.
  8. Serve sprinkled with thinly sliced spring onions.
