Honey Walnut Shrimp

Chinese honey walnut shrimp are fried and tossed in a sweet sauce, finished with crunchy, candied nuts on top — all in less than 30 minutes!

Ingredients

Servings
  • 1 lb Shrimp uncooked, peeled and deveined, large
  • 1/2 cup buttermilk
  • 3/4 cup cornstarch
  • 2 cups canola oil
  • 1 tsp sesame seeds toasted

Sauce

  • 1/3 cup mayonnaise
  • 1/4 cup sweetened condensed milk
  • 1/2 tsp rice vinegar
  • 1/8 tsp kosher salt

Walnuts

  • 1 cup walnuts
  • 1/4 cup sugar
  • 2 tbsp honey

Instructions

  1. In a medium bowl, add the shrimp. Pour buttermilk over shrimp, tossing to coat each one. Place the cornstarch on a plate, other bowl or ziploc bag. Line aplate with parchment paper, set aside.
  2. In a another bowl, combine the mayonnaise, sweetened condensed milk, rice vinegar and salt in a small bowl, stir until smooth. Set aside.
  3. Heat wok or large skillet over medium heat. Add walnuts, sugar and honey. Stir and shake pan back and forth to toss the walnuts in melting sugar and honey to coat, 3-4 minutes. Transfer immediately to parchment lined plate and carefully separate the nuts to cool. Wipe wok or skillet clean.
  4. In wok or large skillet add canola oil. Heat over medium heat until a thermometer reads 375°F.
  5. Working in two batches, shake excess buttermilk from shrimp and toss in the cornstarch to coat all over, pressing to adhere.
  6. Transfer shrimp into the hot oil and fry for 2-3 minutes, or until lightly golden brown and crispy on both sides. Set aside on paper towel lined plate or wire rack lined tray. Repeat with the remaining shrimp, check to keep oil temperature at 375°F.
  7. Place all the shrimp in the bowl with the sauce. Toss the cooked shrimp with the sauce to coat and place in serving bowl or tray. Top with honey walnuts, sesame seeds and serve immediately.
