Honey Walnut Shrimp
Description
Honey Walnut Shrimp combines peeled, deveined large shrimp coated with egg white and cornstarch, then deep-fried until crisp. The shrimp are coated in a sauce made from mayonnaise, honey, sweetened condensed milk, and lemon juice, which provides a creamy, sweet, and lightly tangy coating. Separately, walnuts are coated in a slowly cooked caramel glaze made from sugar and water, which hardens into sweet, crunchy candied walnuts as they cool on parchment paper. The candied walnuts are then used as a topping for the shrimp, adding texture and sweetness.
The result is a dish balancing tender, crunchy shrimp with glossy, creamy sauce and the sweet crunch of caramelized walnuts. The caramelization of walnuts requires careful heating until the sugar turns golden but not burned.
Serve the shrimp immediately after coating to ensure the shrimp remain crisp and the walnuts stay separate and crunchy. This preparation makes a good appetizer or a main dish when paired with rice or light sides.
The recipe suggests using parchment paper when cooling the walnuts to prevent sticking, and highlights rinsing the walnuts and draining them well before caramelizing. The egg white helps the cornstarch adhere for the shrimp’s crisp coating.
Ingredients
- 1 lb. (500g) Shrimp peeled and deveined, big
- 1/2 cup walnut halves
- 3 tablespoons mayonnaise
- 1/2 tablespoon honey
- 1/2 tablespoon sweetened condensed milk
- 1 teaspoon lemon juice
- 1 egg white
- 1/2 cup cornstarch for coating the shrimp
- neutral cooking oil for deep-frying, generic cooking oil
Caramel Glaze:
- 1/2 cup sugar
- 1/2 cup water
Instructions
- Add the egg white to the shrimp and stir to combine well. Rinse the walnut halves with water, drain, and set aside.
- In a bowl, stir together the mayonnaise, honey, condensed milk, and lemon juice. Mix well and set aside.
- Prepare the caramel glaze by heating 1/2 cup of water until it boils. Add the sugar and keep stirring until it turns a golden color. Add the walnut halves into the caramel.
- Lower the heat for another 1-2 minutes, then remove the walnuts and place them on a piece of parchment paper to dry. Make sure the walnuts are not sticking together. (DO NOT use regular paper towels as the walnut halves will stick to the paper.)
- Add the shrimp and toss well with the mayonnaise sauce. Transfer the honey walnut shrimp to a serving platter and top the shrimp with the candied walnuts. Serve immediately.
Notes
- Use parchment paper to cool the candied walnuts to avoid sticking.
- Rinse and drain walnuts before coating with caramel glaze.
- Serve shrimp immediately after tossing with sauce to maintain crispness.
