Honey wheat pancakes make a healthy start to your day. Instead of maple syrup, make this simple honey butter syrup for a fun change!

Ingredients
- 1 1/2 cups whole wheat white flour
- 1/2 tablespoon baking powder
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 2 large eggs beaten
- 1 1/2 cups buttermilk
- 3 tablespoons melted coconut oil
- 3 tablespoons honey
Honey Butter Syrup:
- 1/2 cup butter melted
- 1/4 cup honey
- 1 tablespoon half and half
- 1/4 teaspoon cinnamon
Instructions
- In a large bowl, combine the flour, baking powder, salt and baking soda. Set aside.
- In a small bowl, combine the eggs, buttermilk, coconut oil and honey. Add this mixture to the dry ingredients and mix it until it is smooth. Fry the pancakes on a hot, lightly greased skillet, baking each side for 2-3 minutes, or until the pancake is cooked through.
- For the syrup, combine the melted butter, honey, half and half and cinnamon in a small bowl. Mix well right before serving on top of the pancakes.
Notes
- The coconut oil might harden a bit once added to the mixture. That is OK. Just mix as well as possible.
