Honeyed Cardoons with Pine Nuts and Thyme

Honeyed Cardoons with Pine Nuts and Thyme features tender cardoon pieces sautéed with onions, then glazed with a mixture of dry sherry, honey, toasted pine nuts, and fresh thyme. This dish balances slightly sweet, herbal, and nutty flavors, complemented by the soft texture of boiled cardoons and the caramelized edges from sautéing. It finishes with freshly ground black pepper for a mild spice lift.

Description

This recipe begins by trimming and boiling cardoons in salted water with lemon juice to remove bitterness and soften them. The cooked cardoons are sliced and combined with sautéed onions until lightly browned. Toasted pine nuts contribute texture and a subtle nutty flavor. Adding dry sherry and honey creates a glossy, slightly thickened glaze that coats the cardoons and onions.

The fresh thyme is stirred in at the end to impart herbal brightness, while black pepper adds gentle heat. The flavor profile combines sweet, nutty, and fragrant elements making a distinctive vegetable side. The cooking technique of boiling then sautéing ensures the cardoons are tender with a tender bite and caramelized notes.

The dish is best served immediately while warm to preserve its glossy texture. It can complement roasted meats or be part of a vegetable-focused meal. The pine nuts require careful toasting to avoid burning, which happens quickly.

Ingredients

Servings
  • 1 onion medium
  • 1/2 pound cardoon
  • 2 tablespoons olive oil
  • 1/4 cup dry sherry or white wine
  • 2 tablespoons honey
  • 1 tablespoon thyme fresh
  • 1/4 cup pine nuts toasted
  • salt
  • black pepper

Instructions

  1. Trim the cardoons and boil them for 30 to 40 minutes in salty water with the juice of 2 lemons thrown in. This can be done up to a day ahead.
  2. Slice the cardoons into 1/2 inch pieces. Slice the onion into half-moons. Toast the pine nuts — watch them, as pine nuts go from toasted to burnt in a heartbeat.
  3. Heat the olive oil in a large sauté pan over medium-high heat. Sauté the onions with some salt until just beginning to brown on the edges. Add some salt. Add in the cardoons and stir to combine. Let this cook for a minute or two.
  4. Add the dry sherry. If you don’t have dry sherry, use a dry white wine. Turn the heat up to high and boil it furiously. Add the honey and stir to combine. Add the pine nuts. Let this boil down to a glaze. Turn off the heat and toss in the thyme and add some fresh ground black pepper. Toss well to combine and serve at once.
