Description
Traditional Hong Kong Milk Tea begins with a strongly brewed black tea mixture simmered for 10 minutes, often with a blend of several black tea types. The tea is then filtered repeatedly using a sackcloth tea bag by pouring the brewed liquid back and forth multiple times—a process known as "tea pulling"—to mellow bitterness and concentrate flavor. After reheating, the tea base is mixed with evaporated milk and sweetened condensed milk to achieve a creamy texture and sweet balance.
The tea's robust, slightly astringent flavor is softened by the milks, creating a smooth beverage with a rich mouthfeel and characteristic amber-brown color. It can be served immediately warm or poured over ice for a refreshing cold drink, with condensed milk stirred in when iced for added sweetness.
This preparation reflects the authentic Hong Kong milk tea tradition, offering a beverage that is both comforting and distinctive. The shortcut version preserves much of the flavor by brewing strong tea and combining the milks without extensive tea pulling, suitable for convenient preparation.
Ingredients
Black Tea Base- shorcut version
- 2 tbsp. black tea around 4 tea bags, mixture
- 1.5 cups water filtered
Assemble For each serving
- 1/2 cup evaporated milk
- 2 tbsp. sweetened condensed milk
- 1 cup black tea liquid
Instructions
Black tea base with a shortcut version
- Mix the tea and water in a saucepan and bring to a boil. Reduce the heat to a simmer and simmer for 10 minutes. Remove the tea bags or strain to remove the tea residue.
- Pour the black tea base back and forth a couple of times to enhance the flavor and remove the bitterness. Since we are making a strongly brewed black tea base.
Assemble
- Add around 1 cup of black tea base with 1/2 cup evaporated milk and 2 tablespoons of sweetened condensed milk. Stir well to make sure the sweetened condensed milk is dissolved. Serve the tea right away for warm version.
- Optionally for a iced version, in the serving cup, add enough ice cubes and then around 2-3 circles of sweetened condensed milk. Pour in the black tea base. Mix well before serving.
Notes
- The traditional brewing method involves simmering 40g of black tea in 2 liters of water for 10 minutes, then performing the tea pulling step four times to remove bitterness and enhance flavor.
- After tea pulling, the tea is reheated by simmering for about 15 minutes before assembling with evaporated and sweetened condensed milk.
- For iced versions, add ice cubes and swirl sweetened condensed milk into the glass before pouring in the tea, stirring well before serving.
