Description
This Horchata recipe involves blending raw long-grain rice with cinnamon sticks and part of the water until the rice is coarsely ground. Additional water is then blended in before the mixture is refrigerated overnight to allow flavors to meld and soften. The next day, it is strained through a fine mesh or cheesecloth to remove solids.
The strained rice water is combined with milk, vanilla extract, ground cinnamon, and sugar, then chilled thoroughly before serving. The resulting drink has a creamy texture from the milk and a balanced sweetness with the aromatic warmth of cinnamon from both the sticks and powder. It is traditionally served cold over ice for refreshment.
Ingredients
- 1⅓ cup long-grain rice uncooked
- 5 cups water divided
- 2 cinnamon stick
- 1 cup milk
- 1 tablespoon vanilla extract
- ½ teaspoon cinnamon
- ⅔ cup sugar
Instructions
- Add uncooked rice, 2 cups water, and cinnamon sticks to your blender and blend until roughly ground. Add the rest of the water and blend for an additional minute. Pour this into a pitcher and refrigerate overnight.
- Strain the mixture through a mesh strainer (or cheesecloth) and discard chunks.
- Add milk, vanilla, cinnamon, and sugar into the rice water and chill before serving over ice.
