  • 12 kebab sticks
  • ½ cup coffee extra strong, cold
  • ½ teaspoon salt
  • 1 tablespoon maple syrup
  • 2 teaspoon cayenne pepper (see notes)
  • 1 teaspoon red pepper flakes
  • 1 garlic clove
  • ¼ teaspoon allspice
  • 1.1 lb chicken tenderloin
  • ½ cup sour cream

Instructions

  1. Start by soaking the the kebab sticks in a jug of water. This prevents them burning on the grill.
  2. Pour the coffee, salt, maple syrup, chilli powder, chilli flakes and all spice into a large ziplock bag.
  3. Crush in the garlic into the bag, then seal the bag and shake it about a bit to mix everything together.
  4. Add the chicken tenders and place the bag in the fridge to marinade for 2-6 hours.
  5. Preheat the grill to it's hottest setting.
  6. Remove the chicken from the bag and thread each tender onto your soaked kebab stick. Lay them out of a baking tray.
  7. Grill one each side for 3-4 minutes a side until just cooked through.

Notes

  • These hot and spicy skewers are hot! If you want to tone it down then use just 1 teaspoon of cayenne pepper.
