Description
This Hot Caprese Pasta recipe begins by cooking pasta until al dente. Meanwhile, a frying pan is used to gently sauté minced onion and garlic in olive oil, then halved cherry tomatoes are added and cooked until soft and lightly browned, releasing their natural sweetness and a bit of caramelization.
Fresh basil and oregano, along with hot pepper flakes, are stirred in to infuse the dish with aromatic and spicy notes. The cooked pasta is then added to the pan along with some reserved pasta water and cubed fresh mozzarella. Tossing it briefly allows the mozzarella to warm and soften without fully melting, adding creamy pockets of cheese throughout.
This pasta is served immediately for optimal texture, balancing fresh and hot flavors with melty mozzarella lending a smooth finish. It pairs well with grated Parmesan cheese if desired for extra richness.

Ingredients
- 2½ cups pasta cooked
- 3 tablespoons olive oil
- 1 tablespoon onion minced
- 1 clove garlic minced
- 14-16 cherry tomato or grape tomato, halved
- ¼ teaspoon salt
- 5 basil leaves more or less fresh
- ½ - 1 oregano
- hot pepper flakes to taste
- 7 ounces fresh mozzarella cubed
Instructions
- In a large pot of boiling salted water cook pasta (short or long) until al dente.
- In a large frying pan on medium heat, add the oil, onion, garlic, spices and tomatoes, fry until soft and lightly browned.
- Add cooked pasta, ½ ladle of pasta water and mozzarella, toss gently until completely combined on medium heat for 1-2 minutes until mozzarella starts to melt. Sprinkle with freshly grated Parmesan Cheese if desired. Serve immediately. Enjoy!
Notes
- Use about 2 to 2½ ounces (57–75 grams) of dry pasta per person for a serving size yielding roughly 1¼ to 1¾ cups cooked pasta.
- Store any leftover pasta in an airtight container in the refrigerator and consume within 2 to 3 days.
- Reheat leftovers gently in a pan with a little water to maintain moisture and prevent dryness.
