Description
Hot Cocoa Cookies blend softened butter with sugar and brown sugar, eggs, and vanilla, then incorporate a dry mix of hot cocoa mix, cocoa powder, baking powder, salt, and flour. Chocolate chips are folded in for bursts of melted chocolate. After chilling the dough for at least an hour, cookie balls are baked until just firm. Mini marshmallows are then added atop each cookie, baked briefly again to create a gooey, lightly toasted topping. This creates a soft cookie with a chocolate flavor that's intensified by the cocoa and hot cocoa mix.
The texture combines a tender crumb with pockets of melted chocolate and sweet marshmallow topping. The chilling step helps the cookies hold their shape during baking and develop flavor. Baking with marshmallows near the end preserves their marshmallow texture without burning.

Ingredients
- 1/2 cup butter softened
- 1 cup sugar
- 1 cup brown sugar
- 3 egg
- 2 tsp vanilla extract
- 2 1/4 cups all-purpose flour
- 3/4 cup hot cocoa mix NOT sugar free
- 1/4 cup cocoa powder
- 1/2 tsp salt
- 2 tbsp baking powder
- 1 cup chocolate chips
- mini marshmallows for topping
Instructions
- In a large mixing bowl mix together hot chocolate mix, cocoa powder, salt, baking powder, and all purpose flour and set aside.
- Mix the butter, sugar and brown sugar together with an electric hand mixer until a smooth creamy mixture remains Add the eggs in one at a time and mix between each egg. Mix in the vanilla.
- Pour the dry ingredients into the mixing bowl and beat until a smooth batter remains. Stir in the chocolate chips.
- Scoop cookies with a 1.5 tbsp cookie scoop, roll into balls with your hands, and place in the fridge for at least an hour. After chilling, place dough balls on a parchment lined baking sheet with space between each cookie.
- Bake at 350 F for 10 minutes, remove the tray and quickly top each cookie with 3-4 mini marshmallows. Bake another 2 minutes. Remove and allow to cool.
