Hot Fudge Brownie
Description
The brownie base is created by melting salted butter, canola oil, milk chocolate, dark chocolate, and unsweetened cocoa powder together until smooth. This chocolate mixture is then sweetened with granulated sugar and vanilla extract, followed by gently incorporating eggs one at a time to ensure a thick yet smooth batter. Folding in dry ingredients including flour, baking powder, and salt is done carefully to avoid over-mixing, maintaining a tender crumb.
Milk chocolate chips and optional chopped walnuts are added for texture before pouring the batter into a prepared 9x13-inch pan to bake for 30-35 minutes until just set. After cooling briefly, holes are poked into the brownies to allow the homemade hot fudge sauce to seep in. The hot fudge sauce is made by boiling heavy cream, corn syrup, brown sugar, cocoa, salt, and chocolate chips until silky, finished with butter and vanilla for a glossy coating.
Served warm with vanilla ice cream and maraschino cherries for garnish, these brownies balance fudgy texture with rich chocolate topping.
Ingredients
for the brownies
- 3/4 cup butter salted
- 1/4 cup canola oil or vegetable oil
- 4 oz. milk chocolate chopped
- 4 oz. dark chocolate chopped
- 3 tbsp cocoa powder unsweetened
- 2 cups granulated sugar
- 4 egg
- 1 1/2 tsp vanilla extract
- 1/4 tsp baking powder
- 1/2 tsp salt
- 1 1/2 cup all-purpose flour
- 1/2 cup semi sweet chocolate chips
- 1/2 cup walnuts chopped, optional
for the hot fudge-
- 2/3 cup heavy cream
- 1/2 cup light corn syrup
- 1/3 cup brown sugar
- 1/4 cup cocoa powder unsweetened
- 1/4 teaspoon salt
- 3/4 cup chocolate chips divided in half
- 1 1/2 tablespoons butter
- 1 teaspoon vanilla extract
for toppings
- vanilla ice cream
- maraschino cherries for garnish
Instructions
- Preheat oven to 350° F. Line a 9 x 13 pan with nonstick cooking spray and parchment paper and set aside.
- In a large pot over medium-low heat, melt butter, oil, chocolate, and cocoa together until fully melted and smooth. Remove from heat.
- Pour in sugar and vanilla extract. Add in eggs, 1 at a time, stirring vigorously before the next addition. After all four eggs have been mixed in, the batter should be thick and smooth without that granular look to it. Add in the remaining dry ingredients and stir gently until just combined. Do not over mix.
- Fold in milk chocolate chips and walnuts if using, and pour batter into prepared pan. Smooth the top and bake 30-35 minutes. Cool 5-10 minutes before poking holes into it for the hot fudge sauce.
for the hot fudge
- While brownies are baking, place heavy cream, corn syrup, brown sugar, cocoa, salt, and half the chocolate chips into a small saucepan. Place over medium heat and stir frequently until it comes to a boil. Reduce the heat to low and lightly simmer for 5 minutes. Remove from heat and whisk in remaining chocolate chips, butter, and vanilla. Pour sauce into a separate bowl to cool until brownies are done baking.
- Once brownies are cooled 5-10 minutes, drizzle 3/4 cup prepared hot fudge overtop brownies and spread to saturate evenly. Sit another 10 minutes or so, then cut into squares and serve with ice cream and cherries.
