Ingredients
- 4 boneless, skinless chicken breasts
- ½ cup flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- ¼ cup honey
- 1 tablespoon hot sauce (adjust to taste)
- 1 tablespoon butter, melted
- 1 cup cooked rice (white or brown)
- 1 cup shredded lettuce
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- ¼ cup crumbled feta cheese
- Fresh cilantro, chopped (for garnish)
Instructions
- Preheat the oven to 400°F (200°C).
- Cut the chicken breasts into bite-sized pieces.
- In a shallow bowl, mix the flour, salt, and black pepper.
- In another shallow bowl, place the beaten eggs.
- In a third shallow bowl, place the panko breadcrumbs.
- Dredge each piece of chicken in the flour mixture, then dip in the beaten eggs, and finally coat with the panko breadcrumbs.
