Ingredients

  • 1.4 pounds Italian sausage hot
  • 6 cups spinach raw
  • 1 green bell pepper medium
  • 1 red bell pepper medium
  • ½ onion medium
  • 1 tomato canned
  • 1 jalapeño canned
  • 2 cups beef stock
  • 2 teaspoons chili powder
  • 2 teaspoons cumin
  • 2 teaspoons garlic minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon kosher salt

Instructions

  1. Rip sausage into chunks and cook it all the way through.
  2. Add sliced peppers, tomatoes, beef stock, and spices to crock pot. Put sausage on top and mix it well.
  3. Fry up your onions and garlic, add to crock pot when translucent.
  4. Add bed of spinach on top, let cook for 3 hours on high.
  5. Stir after 3 hours, set to low and cook for additional 2 hours.
