The uncooked pearls are added and gently stirred to prevent sticking. Cooking times vary by type, with standard pearls boiling for about 20 minutes and quick-cook variants for about 5 minutes.
After boiling, the heat is turned off and the pearls are left to rest in the hot water for an additional 20 minutes (or 5 minutes for quick boba) to complete cooking through residual heat. Once rested, pearls are rinsed in running water to remove surface starch, and cold soaking can enhance chewiness by firming the texture.
For flavoring, the cooked boba are drained and mixed with brown sugar syrup, simple syrup, or honey. For caramelized brown sugar pearls, cooking the pearls directly in brown sugar until dissolved adds a deeper flavor dimension. This approach produces tender, sweet pearls suitable for various bubble tea recipes or as a dessert topping.

Boil the water
- Bring a large pot of water (Recommend 10 times in volume) to a rolling boil.

- Rinse the tapioca pearls in running water to remove extra starch. For an even chewier texture, soak the tapioca pearls in iced water.
Sweeten the tapioca pearls
- Drain the tapioca pearls and then flavor the tapioca pearls with simple syrup honey or brown sugar syrup. If you don’t have syrup by hand, mix it with white sugar. If you want a caramelized brown sugar version, add some brown sugar in a saucepot, then place the cooked tapioca pearls in. Cook until the sugar is completely dissloved.
