How to Freeze Strawberries
Description
How to Freeze Strawberries outlines the steps to preserve strawberries by freezing them in jars. After choosing firm and blemish-free strawberries, they are cleaned thoroughly either by rinsing or soaking, then dried carefully. The strawberries are hulled and sliced or chopped, tossed gently with lemon juice and sugar to maintain color and sweetness, then packed into prepared jars with a small headspace, and placed in the freezer. This process helps keep the berries usable for up to a year while retaining much of their fresh taste.
The flavor is fresh with a hint of added sweetness and acidity from the lemon juice, which helps prevent browning. Texture will soften once thawed, making these strawberries suitable for blending, baking, or topping dishes rather than eating raw as fresh.
Frozen strawberries can be removed as needed, thawed, and used within a few days for best quality. This method is economical for preserving seasonal fruit for later consumption in smoothies, sauces, desserts, or baked goods.
Ensure jars are completely dry before filling to avoid freezer burn. Maintain about two centimeters of space between the fruit and jar lids to allow for expansion. Once thawed, use the strawberries within 2 to 6 days to enjoy optimal freshness.
Ingredients
- 2 pounds strawberry make sure they are firm, ripe and free of blemishes, fresh
- 1½ tablespoons lemon juice
- ¼ cup sugar
- 3-4 medium jars (washed and dried, with tight fitting lids)
Instructions
- Wash the jars in hot soapy water, rinse well and dry.
- If the strawberries are already quite clean, then place them in a colander and rinse them under cold water, place them (single layer) on a dry clean tea towel and gently dry. Then hull and slice or chop depending on your preference.
- If the strawberries are not very clean (eg. just picked or it just rained and they have some dirt on them) then fill a large bowl with cool water, add the strawberries and move them around until they are clean. Remove the strawberries and place them (single layer) on a dry clean tea towel and gently dry. Then hull and slice or chop depending on your preference.
- Place the sliced or chopped strawberries in a large bowl, sprinkle with lemon juice and sugar. Gently toss together. Spoon into the clean jars, leaving approximately one inch ¾ inch / 2 cm free space between the strawberries and the top. Then place jars in the freezer. Will keep up to a year. Enjoy!
Notes
- Select firm, ripe strawberries without blemishes for best freezing results.
- Dry the berries thoroughly before freezing to minimize ice crystals.
- Leave about 2 centimeters of headspace in the jars to allow for expansion during freezing.
- Use thawed strawberries within 2 to 6 days for optimal flavor and texture.
