This method for freezing tomatoes involves cleaning and drying fresh tomatoes thoroughly before spreading them on a freezer-safe tray to freeze individually. Freezing them solid prevents tomatoes from sticking together in storage. Once frozen, tomatoes are placed into designated freezer bags. To maximize freezer life and prevent freezer burn, the air is removed from the bags either by partially sealing and immersing in water to push air out or by inserting a straw and sucking out air carefully, then quickly sealing the bags. Instructions

  1. Wash and dry the tomatoes.
  2. Place on a freezer-safe tray and freeze until firm.
  3. Place as many tomatoes into a zippered freezer bag (do not use a non-freezer bag).
  4. Close the zipper almost to the end then choose 5 OR 6 below.
  5. Place the bag into a bowl of water (being sure not to let any water enter into the bag) which will push out the air, then close the zipper completely. This is the best method.
  6. Insert the straw into the bag and suck out the air from the bag and quickly finish closing the bag at the same time. This will remove more air which will help keep the tomatoes longer.
  7. Place in the freezer for up to a year.

Notes

  • Use ripe tomatoes to ensure better flavor and texture after freezing.
  • If using a straw to remove air, use the same end for multiple bags to maintain hygiene and avoid contamination.
  • Do not blow air into the bag as it introduces bacteria and reduces storage safety.
