Ingredients
- 2.5 liters Grape Must see how to make it here
Instructions
- Add the Grape Must to a large cooking pot and bring to a gentle simmer.
- Simmer over medium-low heat until it gets reduced to ¼. Then store it in sterilized glass jars or bottles for up to a year. To make a thick Petimezi keep simmering until the liquid gets thick as honey and reduced down to ⅕ of the original volume of the Must (see Note 1 below).
Notes
- Note 1: How much you will need to reduce the Must will depend on the grapes you're using. For example, a white variety of grapes will need to be reduced a little bit more than a red variety of grapes.
- Also, the amount of sugars each variety contains plays an important role in thickening Grape Molasses. More sugars equals more thick liquid.
