Classic Avocado Toast

  • ½ tsp lemon juice
  • ½ tsp extra virgin olive oil

Pico de Gallo Avocado Toast

  • ¼ cup Pico de Gallo

Goat Cheese and Chives Avocado Toast

  • 10 slices of radish
  • 2 Tbsp crumbled goat cheese
  • 1 Tbsp chopped chives

Everything Bagel Avocado Toast

  • 1 tsp everything Bagel seasoning

Avocado Toast with Egg

  • 1 tsp oil
  • 2 eggs

Instructions

  1. Classic Avocado Toast: Scoop avocado into a bowl and mash together with lemon juice, oil, salt, and pepper. Spread onto toasted bread.
  2. Pico de Gallo Avocado Toast: Cut avocado into cubes. In a bowl, toss together avocado, pico de gallo, salt, and pepper. Spoon onto toasted bread.
  3. Goat Cheese and Chives Avocado Toast: Spoon avocado onto toast and mash with a fork. Top with sliced radishes, goat cheese, chives, salt, and pepper.
  4. Everything Bagel Avocado Toast: Thinly slice avocado, then arrange onto toasted bread. Sprinkle with everything bagel seasoning.
  5. Avocado Toast with Egg: Heat oil in a large saute pan over medium heat. Add the eggs and cook for 3 to 5 minutes, or until white is completely set and yolk is still a bit runny. Scoop avocado onto toast and mash with a fork, then top each pice with a cooked egg. Season with salt and pepper.

Notes

  • Storage: Unfortunately, neither toast nor avocado keeps the best. Toast will get soggy, and avocados will turn brown. However, if you have leftovers and you are wondering how to prevent avocados from browning on toast, you can remove the toppings and store them in a sealed container with a little bit of lemon juice to keep them from browning. Then, store the bread sealed and separate from the toppings. When ready to eat, toast the bread again and top it with your go-to toppings. Toppings will stay good for up to 3 days in the fridge.
  • Making Ahead: Unfortunately, avocados begin to brown as soon as they're exposed to air. If you want to make this healthy avocado toast in advance, you could toast the bread, prepare all other toppings beforehand, and layer them on when you're ready. Avocado also responds well to acid—if it's coated or sprayed with lemon or lime juice, it will stay fresh and green longer!
