- Preheat an oven to 200°F. Line a baking sheet with parchment paper.
- Spread the celery leaves out in a single layer on the baking sheet.
- Bake for 20 minutes, rotating the pan after 10 minutes.
- Remove the pan from the oven and let the celery leaves cool slightly before transferring to a spice grinder.
- Add salt and process the leaves until finely ground. Cool completely and store covered in your pantry.
