How to Make Lemon Sugar

Lemon Sugar combines granulated sugar with fresh lemon zest to create a fragrant, moist, and pale yellow flavored sugar. The process involves carefully removing only the yellow zest from lemons to avoid the bitter white pith, and then finely processing the zest with sugar. This infused sugar can add a bright citrus note and subtle sweetness to baked goods, beverages, or sprinkle toppings, providing a convenient way to boost flavor without liquid ingredients.

Description

How to Make Lemon Sugar shows how to flavor granulated sugar with freshly grated lemon zest. The recipe uses two organic lemons, washed and dried, from which only the bright yellow zest is peeled off to avoid bitterness from the white pith. The zest is combined with sugar in a food processor and pulsed until the zest is evenly incorporated, resulting in a moist, fragrant, lightly tinted sugar. This lemon-infused sugar can be used immediately or stored chilled in a sealed bag, making it a versatile ingredient to enhance desserts, teas, or breakfasts with a mild citrus aroma and sweetness.

Ingredients

Servings
  • 2 cups sugar
  • 2 lemon preferably organic, plural

Instructions

  1. Wash and dry the lemons. Carefully remove the zest from the lemons, using a serrated vegetable peeler. You want to remove only the bright yellow part, not the bitter white pith underneath.
  2. Put the sugar and the zest in a food processor and pulse to combine. Then process until the zest is fully incorporated into the sugar. This will take under a minute. Take a look, the sugar should be fragrant, moist, and pale yellow. If you see chunks of zest, process a little longer. Fine bits of zest are ok.
  3. Use your sugar in your recipe right away for freshest flavor, or store in a zip lock freezer bag in the refrigerator and use promptly.
