Peppercorn Sauce Without Cream. How to make the best creamy peppercorn sauce in the soup maker without cream and without brandy. This healthier version of the classic steak sauce is loaded with hidden veggies and a steak dinner winner.

- Soup Maker
Peppercorn Sauce Ingredients:
- 1 medium butternut squash
- 480 ml beef stock
- 270 g soft cheese
- 2 Tsp parsley
- ½ Tsp black peppercorns
- salt & pepper
- 120 ml red wine optional
- leftover beef optional

Instructions
- Peel and dice your butternut squash into cubes and load into the soup maker.
- Add everything but the cheese into the soup maker and press sauce and cook for 30 minutes.
- When it beeps add in the soft cheese and blend until smooth. Then let it sit for 10 minutes and it will naturally thicken up.
Notes
- Spare. I had cooked some rump steak the day before and I had some spare from the end of the rump steak that wouldn’t fit in the air fryer. I cut it up into tiny chunks and cooked it and then added it to the soup maker. It made it more flavoursome but this is totally optional.
- Quantities. When I originally made my steak sauce, I added way too many peppercorns and it was too spicy. I have found that half a teaspoon is a great amount. You can also add them in at the end of cooking rather than having them blended into the sauce.
